Easy Vegan Ramen

Maybe you've noticed that a green lifestyle is booming nowadays. Everywhere you go you'll see vegan restaurants popping up. The World Health Organisation has a new Healty diet Fact sheet. And a whole lot of people begin to question their eating habits. 
Very nice off course all that attention but I hear a lot of wining too. For example:

"It's just not that tasty!" 
"I'm never going to like veggies!" 
"I need my bacon!"
"Where do I get my protein?"

Absolute nonsense if you ask me. A vegan diet can be just as tasty as any other diet. You just need to know how to make the good stuff, or purchase it off course. What also bothers me is that some people assume that vegans only eat grass and hemp seeds. Not true, there are plenty of plant eaters who slaughter a bag of crisps daily or lick on Tony's chocolate lollipop like life depends on it. 
Whatever floats your boat.

I have a 99% plant based lifestyle for a good year and a half now. 99% plant based means that  my menu contains a lot of fruits, veggies, legumes, nuts and whole grains and every now and then I'll eat a veggie pizza from our local pizza guy. I have never felt so good eating this way and I don't ever see myself change in the future. I can't say I'm fully vegan because I don't pay attention to E-numbers and I still wear my leather belt from years ago. Maybe in the future i'll become full vegan, who knows. Anyway I know that I'm doing better for myself, the animals and the planet than if I wouldn't have this lifestyle. 

All the small things matter. Maybe you're a great recycle lunatic, grow your own veggies, own a shower clock, go thrifting, have 47 solar panels on your roof or you are a die hard raw-vegan. Ingredients (for 4 persons):

  • 4 carrots
  • 1 bell pepper
  • container mushrooms
  • 2 leeks
  • 1 onion
  • seitan
  • 1 clove garlic
  • soup noodles for 4 persons
  • 2 vegetable broth cubes
  • sriracha
  • soy sauce
  • tamari
  • salt
  • pepper
  • vegetable oil

  1. Cut all veggies in thin strips.
  2. Grab your largest pot and sauté the onion and garlic in a little bit of oil.
  3. Add bell pepper and mushrooms.
  4. When the mushrooms are ready add vegetable broth.
  5. Add carrot and leeks.
  6. Let this simmer on low heat for fifteen minutes.
  7. Bake the seitan until crispy in four minutes.
  8. Add the noodles. 
  9. Add a dash of pepper, salt, soy sauce, shriracha and tamari.
  10. Taste if the ratio sweet/spicy is alike.
  11. Add seitan.
